What a polyphenol count actually means (and how to read an olive oil label)
A polyphenol count is a number — milligrams per kilogram — that tells you how much of olive oil's natural, peppery character-compounds are present. Higher usually means earlier-picked and fresher. But the number is only as good as the proof behind it: look for one an independent lab measured, for that specific batch.
First, what a polyphenol actually is
Polyphenols are natural compounds inside the olive itself. They're what give a fresh, early-harvest oil its green, grassy smell and that peppery, slightly bitter bite at the back of your throat. In short: they're a big part of the flavour you're paying for — and a good marker of how the oil was made.
The number, in plain terms
Polyphenol content is measured in milligrams per kilogram — mg/kg. The higher the number, the more of those character-compounds are present, which usually means the olives were picked earlier and greener, and the oil is fresher.
The polyphenol scale
Two things worth knowing. First, everyday supermarket oils tend to sit low on that scale; early-harvest oils run higher. Second — and this is the part front labels don't tell you — the number is a snapshot taken when the oil is bottled. Polyphenols fade as the oil ages, so a fresh oil with a recent, verified number beats an old bottle with a big claim.
Why the peppery "cough" is a good sign
If a spoonful of olive oil makes you catch your breath or cough once, that's not a flaw — it's the polyphenols saying hello. That throat-tickle is the most honest, unfakeable signal that you're tasting a fresh, high-polyphenol, early-harvest oil. Weak, buttery, "smooth" oil often just means old or low-phenolic.
How to read the rest of the label
The polyphenol number is one line. Here's the rest, quickly:
- Harvest date — look for it, not just a "best before." Olive oil is a fresh juice; you want a recent harvest.
- Single origin vs. blend — one named place (a region, an estate) beats "product of the EU," which is a blend of anonymous oils.
- Cold-pressed — no heat, so the flavour and polyphenols survive the making.
- The container — dark glass or a tin. Light is what ruins oil; a clear bottle on a bright shelf is a bad sign.
- Verified vs. claimed — anyone can print a big number. The question is whether an independent lab measured it, and for this batch.
