Where it grows

100% Picual · Jaén, Spain

Single-origin from one place in Jaén — never an anonymous blend. The terroir, the variety, and the timing are the whole product.

The three oils

One olive, one region, three different places in it.

Picked at different times, in different parts of Jaén. Not a ladder — a map.

Drizzle on a finished dish. Dip bread. Open it when the food is simple and the oil is the flavour.

KALTA 600 grows in the valley of a protected wilderness in Jaén — a UNESCO biosphere reserve since 1983, and the largest protected landscape in Spain. A river rises inside it. More than 2,170 plants have been catalogued there, thirty-four of which grow nowhere else on earth. The valley is not flat: our trees stand out of its sides in different places, among pomegranate, pistachio, almond and fig, with vines and the wild flora that has always grown between the rows. They are picked mid-October, in the same early harvest that gives us KALTA 1000 — a little after the high-grove fruit, still green, a little further into its own ripeness. Same season, same protected landscape, a little less elevation. Our founder walked this valley before we bought a drop of it. Standing among those trees, you smell it before you taste it: floral, fruity.
