What does KALTA mean?
At its heart is alta — Spanish for high. The name was born on a real afternoon in the sierra of Jaén, standing below the highest groves at the top of the valley while the grower explained why elevation matters: trees up there work harder, and harder-working trees give oil richer in polyphenols — the peppery catch you feel at the back of your throat. The K is for punch. And if you hear khalta — the blend — listen for the K instead: one origin, one variety, one harvest. Nothing mixed.
How should I use the oils?
All three shine raw — drizzled over hummus and labneh, with warm bread, or poured across a finished plate. Bright, peppery, and made for everyday use.
What does high-polyphenol actually mean?
Polyphenols are the natural antioxidants behind the peppery catch at the back of your throat. All three oils are above the EU benchmark. The band each one is released at — 400+, 600+, 1000+ — is the number in its name.
